My journey with Grace and Strength begins with God. Eight months prior to being introduced to the program I buried my little brother due to heart disease and my mother was diagnosed with diabetes. The wake up call was loud and clear, and the flashing red lights were blinding- I NEEDED to change. Having a brother pass away at the age of 29 scared me to death! I didn't want to be next! I was asking myself, "Where do I even begin?" The task of weight loss seemed so daunting. It was paralyzing.

And all my son could say to me is, "Wow, so many things have changed about you mom"! He is so right! Many people would consider it crazy to even think of running a mile...

My mom once told me that, because of my Spina Bifida, the doctors told her that I would never walk. Then once I began walking, they told her that if I became overweight as an adult that I would become wheelchair bound. As an adult, I was always fairly fit even without the benefit of what little exercise I could do due to my physical constraints. But once I got married, I slowly started to gain more and more weight. I got the "happy fat".

Kale Chips

Did you know that Kale is a great food full of vitamins (even calcium!).  It tends to have a bit of a bitter taste if you don't cook and season it just right (or hide it in a smoothie!), but these chips don't taste bitter at all! My kids love them and eat an entire batch in one sitting! If you are on P2 then make these without the oil and cheese!  Sprinkle with a bit of Celtic sea salt and any other approved seasonings!
